m'latest Sotto visit
The Guanciale pizza consisted of Sotto's house-cured pork cheek, ricotta cheese, scallions and fennel pollen. The ricotta brings a great textual change from the usual mozzarella while the pork cheek adds a light saltiness to the pizza. The scallions added a balance to the heaviness of the ricotta and pork while the fennel pollen brought a sweeter, more intensified flavor than you would normally get from the fennel seed.

m'other Pizzeria Mozza party
I ordered what inspired m'grilled sausage, panna & scallions pizza. For their pizza, they used fennel sausage instead of my seasoned chicken (I actually liked the chicken sausage as much) as well as red onions, scallions and panna for the "sauce." It was delicious.
And not that I needed it, I also ordered the Tomato, Sicilian oregano & extra virgin olive oil pizza.
